What would our Sichuan inspired chili oil be without a classic Sichuan inspired dish. This vegan friendly (yes there’s no pork, but it’s bomb) is so good, it’ll have you licking the bottom of your bowl when it’s all said and done. 99.999% of this stuff can be found at your local Asian market. If not, there’s this place called Amazon you can try out.

Grab your food processor and toss in the peanut butter, sesame paste (don’t use tahini) , soy paste, water, soy sauce, sesame oil, sugar and rice vinegar. Get that baby nice and smooth, and then fold in the minced garlic.

In your pot of boiling water, toss in the noodles and let them simmer ‘til they’re al dente (time depends on what kind of noodles you’re using). Here’s a secret. After you drain the noodles, put them under some cold running water to stop them from cooking. Season with some salt and pepper and toss with a little bit of sesame oil to prevent from sticking.

Pour about a half cup of the peanut base from the food processor into a sauce pot, and pour in a cup of chicken stock over a medium heat. We’re trying to dilute the sauce and give it that creamy texture. Let it bubble and thicken, stirring every now and then (3-4min).

Split evenly into 2 bowls, creating a nice pool for your noodles to soak in. Pour in some Purple Panda chili oil, drop in the noodles, and garnish with the cucumbers, scallions, cilantro, and crushed peanuts.

This stuff is seriously so good, I’m salivating writing about it. Try it for yourself.

Pour the rest of the peanut sauce base into some Tupperware and store in the fridge for a rainy day. All you have to do is pour in some chicken stock, make your noodles and chop up some garnish and you’re ready to eat.


  • 6 oz of egg noodles (or any dry noodle of your choice) - for 2 (around 3 oz a person)

  • 4 tablespoons peanut butter

  • 4 teaspoons sesame paste

  • 4 tablespoons soy paste

  • 5 tablespoons water

  • 2 cloves garlic, minced

  • 2 teaspoon sesame oil

  • 4 teaspoons sugar

  • 4 teaspoons rice vinegar

  • 2 tablespoons peanuts, crushed

  • cucumber, julienned

  • scallions, sliced

  • cilantro, chopped

  • chicken broth
